Tangy Tomato Rice


 
Ingredients

100 gms Rice
200 gms Tomato
100 gms  Onion
 3 green Chilies
1 teaspoon Ginger, Curry leaves, Coriander leaves for garnishing
1 tablespoon of Groundnuts
1 teaspoon of Turmeric powder
1 teaspoon of Chili powder
1 teaspoon of Coriander powder
1 teaspoon of Mustard
1 teaspoon of Cumin seeds
1 teaspoon of Urad dal
1 teaspoon of Chana dal
1 tablespoon of Oil

Preparation

1. Cook the rice and allow it to cool .

2. Grind the tomatoes and ginger to a fine paste.

3. Take a pan, and add oil to it. Add mustard and cumin seeds to it. Wait for it to splutter. Add Urad and Chana dal. Let it turn golden brown.

4. Now add groundnuts to it. Let it change to dark brown colour.

5. Now add finely chopped onions, green chilies and curry leaves.

6. Once the onion is cooked add turmeric and chill powder.
 
7. Then add the tomatoes and ginger paste and then add salt

9. Then add the coriander powder and switch off the stove.

10. Now add this tomato paste to your cooked Rice. Add little oil and mix well. If needed, add salt.

11. Garnish with fresh coriander leaves.

Note: You can add garlic while grinding the tomatoes. Instead of grinding the tomatoes, you can cut it into small pieces and prepare.

This paste goes well with Roti and Dosa also.
